#Simple ice-cream sandwiches


Just because we’re transitioning into autumn, it doesnt mean that I’ll be giving up ice cream just yet. As a matter of fact, I think it’s a perfect dessert all year round. And these thin, elegant ice-cream sandwiches came to me as the biscuits are a favourite of the kids at home, and as I needed a dessert real fast…well, necessity is the mother of invention, here they are!


1 packet Oval or round Belgian-style waffle biscuits

1 tub 200g Mascarpone

1/2 cup Icing sugar

1 teaspoon Vanilla Essence

Lime juice and zest of 1 lime


Place about a heaped teaspoon on a wafer and spread, then top with another wafer. Repeat with all your biscuits till finished, then freeze for a couple of hours.

Serve directly from freezer.

There are many different twist that you can try:

-Nutella, mascarpone and the zest of an orange

– Frozen berries, icing sugar and mascarpone

– Dulce de leche, Alone!

– Mashed banana, cinnamon and dulce de leche
